ASPARAGUS & AVOCADO BREAKFAST

asparagus & avocado on bread rolls

for 1; vegan & low in fructose

ingredients

1 whole grain bread roll
vegan butter
1/2 avocado
1 handful of salad mix
fresh sage
4 asparagus stalks
juice of half a lemon
salt

Cut asparagus stalks in half and boil for about 10 minutes. In the meantime slice bread roll in half and spread with butter. Chop sage with salt and place on bread halves. Add salad mix, avocado and asparagus and finish with some lemon juice on top. Enjoy.
