veganarchitect blueberry & oat breakfast

Hey guys, I hope you are doing good. Today is sunday, and sundays are just the best days. I have to work on a project today so I am not really having the day off, but at least I got almost 10 hours of sleep. Uh yeah, sleeping is fun. So I hope you guys don’t have to work today like me, and can enjoy this lovely day outside.

So now lets talk about tomorrow, because sadly tomorrow it is monday again, many of you probably have to get up really early and work all day. Me too, kinda. So what to have for breakfast on a monday morning? I created this simple breakfast dish, and I am sure you will love it. It is the perfect monday morning breakfast, won’t take much time to prepare and will provide you with lots of energy. As you probably already know, oats are healthy, and blueberries are just the best, for so many reasons.

for 1; vegan & low in fructose & gluten free & raw & sugar free

– 2 1/2 handfuls of rolled oats
– 1 handful of almonds
– 1 handful of blueberries
– 1 handful of coconut flakes

1. Cover oats in cold water and cut almonds in tiny pieces.
2. Add almonds and blueberries to oats and mix well and cover top with coconut flakes.

Health Benefits

Blueberries contain a group of natural phytonutrients which have a unique ability to protect both the watery and fatty parts of the brain against damage from some environmental toxins. Phytonutrients also decrease free radicals levels that are linked to aging and disease. Blueberries are packed with vitamin C, E, riboflavin, niacin, and folate. Studies conclude that compounds in blueberries may reverse some age-related memory loss and motor skill decline.

Oats are great. They have a higher concentration of well-balanced protein than other cereals and they contain a good balance of essential fatty acids, which have been linked with longevity and general good health. They enhance performance when ingested 45 minutes to 1 hour before exercise of moderate intensity.
